I think Hemi E-bodies had extra metal added on top as well as the basic re-enforcement?

ONE INCH is too much! How many times do I have to say that?
It does not matter if it is a pinion snubber or traction bars. You need them really close to stop the pinion rising. If the pinion rises the springs are winding up. Adjust to a quarter inch on the track. One inch and more on the street.

Thought I'd read something about snubbers not fitting the earlier cars
"The current MP pinion snubbers do not properly fit our '62 to '65 Mopars, as the bracket allows the snubber to miss the floorpan.
Using the "Gas Axe" (torch), we removed the critical part from the MP snubber and welded it to the original snubber after removing the stock rubber from the original '63 snubber. It now fits perfect and contacts the floor as it should.
If this is not done the snubber will serve no purpose and may even cause some trouble."

That is interesting.
I would just find a more common later stock snubber and use it to extend the M.P. one.
You can weld yes?

At least, havent tried for 20+ years
I was thinking a solution maybe to bolt a 6mm ish plate to the top of the axle, into the holes provided for the snubber, drill/tap 4 holes in the plate further forward in such a position that, when mounted to those holes, the snubber we have contacts the right area of the floorpan.
As long as the bolt fixings are man enough, it should be strong enough? Stronger than the stock floorpan, and prob stronger than my welding
Or get someone else to weld what we need
Or go the Caltrac route

now why didnt I think of that earlier

Probably much stronger to either overlap and weld it. Or butt weld two halves and side brace it. If done correcly it will be very strong indeed.
