Hi and welcome to you both
With regards to your question:-
The dukes of hazard wheels, does anyone know if we can go 17" or 18" wheels with lower profile tyres.
Those wheels were only and are only available in 14" and 15". Nice idea though, I wanted to do the same
As for the dash board, I used Autoinstruments.com, there are some pics and a price breakdown for the dash on my thread

Another tip regarding interior trim, yes Year One stock it and sell it but they buy it in (and obviously add some $$) from Legendary Auto Interiors so your better off going straight to source.

This will help to.
Don't for Gods sake turn it into a Dukes of Hazzard copy.
There are millions of them about so try doing something tasteful with the car instead.
And those Dukes wheels look awful.

As has already bin said , think hard on what you want , stock or street/racer , cos it costs thousands & more to go from stock to just street/racer.
& that's after you've spent thousands & thousands building it STOCK.
Don't ask how I know.

If that gold one is the car then it's best left alone and restored properly. If it's a Dukes car that is wanted then start with one from the right year and get one that's already done,it'll be cheaper that way and gawd, there's enough of them about. Most of all have fun with whatever you do.
