This is only my opinion , but if you're 'starting out' (like me) then the plate is the way to go , easier tuning with two/four/six jets as opposed to 16 , also being able to get the plug reading down to a fine art , which is easier said than done.
Problem with the plate system (cheater) is the bars spray @ a 30* angle , now depending which way round you fit it (fuel fitting to the front me thinks) it will have a tendancy to lean out two cylinders immediatley around the fuel fitting/jet side , the only way round this is to pull timing on those two cylinders , if you're ignition set up does'nt cater for this , then a colder plug in those two cylinders may help (helped on my setup).
The fogger is a safer bet , as you can tailor the tune for each cylinder , also pull or add spark advance for each cylinder , i'm hoping the NX plate won't suffer any distributing problems.
BTW , this is my experiance with the cheater plate , i'm sure others have had no problems.
