I would advise completely stripping the Carters and blowing out all the air ways.
I have often found on Carters the accelerator pumps degrade and you get a big bog off idle; so rebuild kits may be in order - the top gasket usually breaks anyway.
BTW - Edelbrock rebuild kits do NOT fit 500 Carters - close but no cigar. You need to get the right kit (that may take some time).
I personally have found that hemis need a lot of timing (I am sure I will get shot down in flames on that one) but it is worth a try.

Change the Plugs, correct heat range,
Is the motor stock, cam etc ?
Was the old Stat stuck open ?
gotta get them carbs base lined as Adam said
and bit more timing after that
Or worse the Cams shagged

Hell yeah. I would have to stick the glass in the Challenger and bleed the brakes so I can move it out of the garage though.

Took a carb off today and turns out they are modern Webers/ Edelbrocks ( based on the old Carters) they look fairly new.
Put 8 new NGKs in and bolted the carb back on......to late to run her up now so see how she run's tomrrow
