Although its about 3000 at 70 -80 mph, does that mean my torque converter is slipping?!

You get convertor slip to the degree of up to 5% but I cannot calculate with that degree of "variance" on your MPH statement.
I did factor convertor slip in when it came up with 3.91:1 gears; but it was a little bit out so maybe you have 4.10's in it. I still think 3.91:1 are most likely.
I have tall tyres on the Bee for this reason as mine has 4.10's and I run just under 2:1 ratio so around 42mph at 2000rpm........85mph at 4000 rpm.
My tyres are around 30" tall!

What size and make are your tyres Pete? I sometimes wonder if I'd get any quicker with a taller tyre, what do you think?
