Theoretical Import Question

All going to plan I will be going to Mopars at the strip at Vegas in March-
With an eye to looking out a Mopar
Whats the safest way to seal a deal under these circumstances?
I imagine that I would strike a deal at the show give the guy a deposit - ask to see some ID of his and ask around a bit
From then is it best to hand the rest of the deal over to a shipping co (Rybec or the like)- -
how does it work with the payment- do the shipping co hold the money until the car is collected etc -
Just dont like the thought of handing over wads of cash with no security?
