which U/J

I was looking on the Rock Auto website to find the U/J that I need. It seems that for 7.25" ring gear, there are two alternatives, one with a 2.125" yoke and one with a 2.625" yoke. Lying under the car, I've measured the diameter of the bearing cap as 1.049" and the overall diameter across the yoke as 3.326" from the groove on one side to the groove on the other. The other width I've measured (see picture) is 2.16".
Given the damn awkward position I was in trying to take these measurements (so I may have nudged the calliper retrieving it), neither of the "width" dimensions is exactly either of the Rock Auto quoted sizes. I assume the quoted yoke dimension is for the U/J itself and not the U/J plus bearing caps but without having the U/J dismantled, I can't measure that yoke by itself! OK, I could get one of each from Rock Auto and just use whichever one that fits when the time comes but that seems excessive....
Can you guys advise me which one I should choose?
Second question. Rock Auto quote two different pinion seal widths for a 7.25" ring gear. The SKF part is 0.531" wide, the National part is 0.437" wide. All other dimensions (shaft size, housing bore, outside diameter) are the same. Does the seal width matter?
