And another new member

Hi, we just joined and so am introducing us. I'm Dave and my wife Val owns Fiona, a 1960 318 V8 Dodge Dart Pioneer 4 door, (Fiona, because it's green?). We're in Chelmsford, Essex and this is our first american classic car.
I bought the car off a friend of a friend in 2005 as a surprise "special birthday" present for Val. She really wanted a 60's Corvette, but she is now convinced we have the better wheels and drives her when ever she has the chance. I fitted all new brakes as soon as we got her, wheel cylinders, hoses, shoes and a twin circuit master from a 65ish imperial, all dirt cheap and new from the US. Made new lines using Kunifer. Recently we made a SS dual exhaust, including the straight through absorption silencers (did I mention my son is a Stainless steel welder?) and she sounds really sweet and as a V8 should.
We don't use it as much as we should as shows often clash with Bike sprint and drag meetings, one of our other "hobbies".
The pictures are recent, two are from a friends daughters wedding, she was more excited about the car than the event!
I have been putting off, but now have to take out the engine and trans. Some core plugs have failed, temporarilly fixed with rad weld, but now the trans has sprung a leak, so it must be done and I can paint them at the same time. I think the standard colour is silver, but might use something more exciting, suggestions?
Also, Val wants seat belts, yes she goes on the back of the bikes, but since I had a car written off in a head on last year (a yoof lost it on a bend), she's spooked, so will have to sort B pillar mountings as lap belts won't do. Plus am wondering about a disc conversion.
My main worry is that I'll start "restoring" the engine bay and won't stop until I get to the rear bumper! Already have too many projects, including a 75 Triumph T150V that is almost done. Dave
