Which carb for my 383

My 70 superbee has a 383 with the following mods;

Edelbrock torker inlet
Erson cam with .489 lift
Hedman headers
Later iron heads with standard valve size, been skimmed at some stage, not really sure what the cr is but the original flat top pistons were marked where the valves were touching.
Bored +30 thou, KB pistons with cut outs
Electronic ignition (orange box)

Currently have AFB 600 carb which according to the Holley interactive calculator is undersize. Calculation says around 735.

Holley seem to have several options, 750 classic, 770 street avenger and demon in various configurations but I don't understand the difference between them, other than price!

Any recommendations, explanations or advice appreciated.

Personally I'd use a 750 Holley double pumper for maximum tunability.
