Id like to fit a small toggle switch somewhere in the car to act like an Immobilisor.

Any recommendations on how to wire it?

Easiest way is the kill power to the coil. Could switch power directly from a suitable size switch or use a SPDT relay and diode wired to latch with a micro push button switch.

No Pete, just a standard Ford dizzy.

In that case as stated, the best thing is either to earth the coil or cut the power to the coil with a toggle switch suitably located.
