We were talking about day 2 muscle cars a while back and Yesterday I came across these photos.
This is pretty much the epitome of what a day 2 car is, not sure if this is a Baldwin-Motion car or not but this is exactly the sort of thing you could order from them as a new car or have them modify the car you had.
This is why the factory sold "stripper" cars with no frills but the go fast drivetrain and steel wheels with hubcaps, nobody was going to drive it as it was they just wanted the raw material as cheap as possible so they could do the mods and go racing. Something like this would run in the 11's straight out of the door which was an absolute rocketship in 1968.

The term is used for new cars that were modified straight away either by the owner or the dealers rather than a car that came straight from the factory that way. If the owner of a new Demon ordered up optional race equipment and either fitted it himself or had the dealer do it, then yes I think you could correctly term that a day 2 car.
