getting damp/mould into my interior, advice?

Condensation mate. Many clever people have done studies into it. You wont stop in really. Its different temperatures meeting on either side of the same surface with moisture present. You could put a tubular heater in your garage to take the chill off the air, and put some little bags of Silica gel inside the car to absorb whats left. That will do for starters.

If it lives outside with not much use in the winter i would pull the carpets out , cos it' leaking somewhere to cause condensation.

Run a pair of heating pipes out there & stick a rad in it. :D

My guess is the car is leaking water into it, trunk, screens or the wiper spindles. Bet the carpets and floorpans are soaking...........

Not really Pete, mine doesnt leak and i get Mould on the plastic door panels, that just wipes off,
And thats in a garage, windows open on the car ?? :?

I've been told that a few bowls full of dishwasher salt in the car helps dry it out out...may be worth a shot? :roll:
The pump don’t work coz the vandals took the handles.

save up all those packets of silica gel that you get in electronic equipment and put them inside : )

I have a silica gel cartridge in mine. £3 from woolworths.

Once Silica Gel is white it has absorbed all the moisture it can. You can recharge, as it were, by putting the bags in a low heat oven to dry out the crystals.
