Can anyone tell me what the solenoid does in the center of this pic, as it doesn't look right to me with that bolt sticking out and looks like a bodge of some sort?

Factory Correct.
It is in theory to prevent running on when the ignition is turned off - it shuts the centre carb.
In other words a factory bodge.............

You very rarely see them as most have been dumped by owners over the years.
