Holley 2 barrel tuning and emissions pipework removal?

Can someone please point me to a guide or something on how to tune the carb on my 360? It's a rebuilt Holley 2 barrel fitted in USA before I bought the car and looks good and clean/new but there's a horrible flat spot on pull away. It idles fine but just touching the pedal to pull away slowly it coughs and splutters a bit till you put your foot down that little bit more till it then tears away. It's really annoying in traffic and just cruising around.

Also where can I find out what I can remove from the "low emissions" stuff all over the engine and carb? There's loads of pipework there I really don't think I need. It's a 77 so is it all that leanburn thing I've heard about?

Sorry for the newbie questions but it's all a bit different to the Jap stuff I've been used to for the past 20 years! ;)

Flat spot is due to insufficient fuel pump shot so the motor leans out when you initially open the throttle....a common problem..........
