Yes I understnad that the E bodies have less available wheel arch.

And when fitting wheels and tyres that fill the arches to the max, remember to check both sides of the car for fit.
The axle can be not centered under the car by quite a margin....

7x15 with 225/60x15 front

Do you have the bright wheel arch trims and have you had to roll the arches up back?
Also whats you Back space?

same same but i have 11inch wide wheels and 275 i think or maybe 295 on back but have jack up springs.
this seems to be the standard big combo a fews people are running like this.
If you need me to measure back space or you want to take my wheels for testing feel free

Don't know if this helps but a few guys on the 66/67 forums are running 15x8 235/60/15 at the front and 15x10 295/50/15 at the rear. The catch at the rear is usually backspace which I think is about 5". Some of the guys ordered from Stockton Wheels while some others ordered from Summit who I believe can do custom wheels as well on certain brands.
The guys who are running 15x10 have not modified any of the car wheel well/suspension to get the wheels to fit. I've seen some of the photos and they are tight but fill up the wheel well very nice. The one recommendation is measure, measure and measure again (on both sides).

I have measured lots of times for the Chally now, plus got help from Dave who has done it already.
I am going with 7 x 15 at the front and 8 x 15 at the rear in Minilites with 4 1/2 backspace rear, 3 1 /2 front. I measured and there is probably room to go more on the backspace at the rear but my main concern is filling the arch outwards to look right without touching.

I'm getting the wheels first then tyres. I have managed to get another set of 15 x 7 and 15 x 8 to put on to measure so I could see what did and didn't work.

Matt my Challenger has 15 x 8.5 with 255/60/15 tyres, wheels are 3 3/4" backspace I think, they don't touch but they are quite close, they fill the arches just right

Standard springs no chrome mouldings. Standard 3.75 bs torque thrust
But I also would like to know whats the biggest tyre you can get under rear if low like yours even if springs have to be relocated but with standard tubs and inner arch lump, think the tyre sitting under the arch looks better that back end sitting up.
